Chilaquiles, otra vez

Yes, again. Oh shut the hell up, what are you, my dietician?

At least this time I was able to restrain myself long enough to give you the photo to go with the recipe.

  9. There is a Mexican restaurant about 1 ½ miles from my house that make fabulous Chilaquiles. The dish is so huge I actually had enough food for three meals all for about $8 I think. I know that hey are a lot cheaper in Mexico but for three meals here that is a deal.

  11. So two days of chilaquiles inspired me to make my own crazy version this morning in keeping with the “leftovers” idea – - green salsa, chihuahua cheese, sour cream, and eggs & tortillas, of course.

  15. Just so you know, I was so excited when you posted the recepie. The only way I knew how to make chilaquiles was the way my BFF taught me (back when I thought I had a chance at the cooking thing), meaning making them from scratch. Seeing as hell will freeze before I can find fresh epazote, chipotle and guajillo chiles in this country I thought I was doomed to never ever eat chilaquiles while living here.

    Then I saw your recepie and I did a cartwheel of joy. I had an old can of chipotles I’d brought over last time I was home and the rest of the ingredients I could so find here. I still missed the REAL mexican tortillas and had to do with the plan Dorito-like chips they sell here, but they were effing delicious!!!

  17. Hey Fned, I think if I had remembered I had someone of Mexican heritage reading my blog, I’d have been too afraid to post my recipe! I’m relieved you liked my version of it…but I am SHOCKED to hear that you can’t find corn tortillas in Paris!
